Sumac Garlic Bread

Our version of garlic bread upgrades the classic with more flavor, more excitement, more sumac! This is an EXTREMELY delicious way to prepare bread — one that will leave your hands messy and your tastebuds singing. We love it grilled, but using a broiler works, too.
Serve this alongside a summery meal where everything comes off the grill, or with a cozy winter bowl of beans and hearty greens. It’s brilliant alongside brothy clams cooked with white wine and pimentón.
Ingredients
- 1 heaping tablespoon sumac
- 1 teaspoon pimentón dulce (Spanish sweet smoked paprika)
- 1 teaspoon lemon zest
- 1 heaping tablespoon grated or minced garlic
- salt
- 1/2 cup extra-virgin olive oil
- 4 thick slices of delicious crusty bread
Instructions
In a small bowl, combine the sumac, pimentón, lemon zest, garlic, and a pinch of salt – just enough to lightly season the mixture. Add the olive oil and stir to combine well. Using a spoon and a pastry brush, brush the mixture onto both sizes of each piece of bread, making sure to get all the solids from the bowl onto the bread. Give the bread a final light sprinkle of salt.
Grill or broil the bread for about 1.5 minutes per side, depending on the intensity of your flame — just long enough for the bread to be nice and warm and the garlic to begin to sizzle and soften. (Do not overcook, or the sumac and garlic will char.)
